Quick, Easy, & Healthy Snack: Frittata

Get your serving of protein, veggies, vitamins, and minerals from this quick and easy frittata! Healthy and delicious, you’ll have this mouth-watering snack in just minutes. And the fun part: you can add whatever your heart desires into your frittata! Another pro: you can make this in the microwave! No cleaning up pots and pans and other utensils!


  • 1 teaspoon olive oil or butter
  • chopped veggies (optional)
  • chopped meats (optional)
  • 2 eggs
  • Salt and pepper for seasoning


Place the oil or butter in a microwave-safe deep dish or bowl. Cover and microwave on high for approximately thirty seconds (or until the butter is melted). Add your vegetables and/or meats. Cover and microwave again on high for approximately one minute. Beat in eggs, salt and pepper. Cover and cook on high for another one to two minutes. Caution! Bowl and frittata will be hot! Let stand for about three minutes to set and cool. Enjoy!
